Best Granola Recipe
So simple. Most granola recipes are all pretty much the same. I like this one because it yields a good texture, isn’t too sweet, and has some flavor. I hardly ever measure ingredients, so this is a rough estimate.
2 cups rolled oats
1 cup shredded coconut
1 cup pepitas
1 cup hemp hearts
3 Tbsp cocoa nibs
2 Tbsp coconut sugar or brown sugar (or blackstrap molasses)
1/2 cup coconut oil, melted
1/4 cup maple syrup or honey
2 Tbsp of sunflower seed butter (or other nut butter)
1 tsp vanilla extract
2 tsp cinnamon
Pre-heat oven to 300ºF. Add all dry ingredients to a medium bowl. Stir to combine. Melt coconut oil and add to dry ingredients along with maple syrup, almond butter, and vanilla extract. Stir to combine. Spread out on a baking sheet and bake for 18-23 minutes until slightly brown.
*This is my favorite base recipe. I often add other ingredients like almonds, dried cherries, turmeric, ginger, molasses, dried lavender, cocoa powder, peanut butter, etc. Be creative!
