Kardemummbullar {Swedish Cardamom Buns}
Sweden. These are my people.
I feel completely at home in the northland, which is fitting based on my ancestry. I don’t think I love anything more than fika, the afternoon ritual of taking a pause along with a coffee and cinnamon bun.
Back home, I’m missing my daily fika so I recreated it in my kitchen.
I have a recipe I’ve used in the past, but I wanted to change it up a bit using some new ingredients from NOW foods.
Dough:
- 2.5 c flour (I used half all-purpose and half spelt)
- 2 t instant yeast
- 1 t salt
- 1 t cardamom
- 1/2 c milk (any type)
- 1/4 c water
- 1/4 c avocado oil
- 1/4 c date sugar
Filling:
- 1/3 c butter or coconut oil
- 1/4 c coconut sugar (or brown sugar)
- 1 t cinnamon
- 1 t cardamom
Mix flour, yeast, cardamom, and salt together. Set aside. Heat milk and water to ~110 degrees, add oil and sugar and stir well to combine. Slowly stir the flour in and knead for a few minutes. Cover in a bowl to sit for 10-15 min.
Heat butter and sugar together in a small saucepan. Stir in cinnamon and cardamom. Set aside.
Roll out the dough into a long rectangle. Spread the filling evenly over the dough and fold into thirds (the long way).
Use a sharp knife to slice into 1″ sections, about 10-12 total. Twist each piece into a knot and place on a parchment lined baking sheet. Brush with egg wash or milk, cover and allow to rise for 20 min.
Pre-heat oven to 350 degrees and bake buns for 20-25 min or until brown. Drizzle with maple syrup, sliced almonds, or pearled sugar.
